Gluten Free Chocolate Chip Cookies

Ah you guys! My first recipe to share on here + the first recipe I ever created. I thought it was fitting ;-) I’ve been chomping at the bit to share these with y'all. I call these guys my little OG’s. They’ve been with me since the beginning and are honestly a staple here in the Petty household. If you know, then you know. I’m always whipping these guys up for dinner parties, Bryce’s (never ending) sweet tooth, or just to have quick on hand when you’re feeling a good ole cookie. They’re soooo easy!
When I started going a more natural route with food, I wanted all of my ingredients to be clean. So, I started baking my own stuff. I wanted to know exactly what I was putting in my body. Bryce and I were living in Jersey at the time and poor guy was definitely my taste-tester for these bad boys. Don’t be fooled—he loved it. There were for sure some rough trials though, I’ll just leave it at that! After many (failed) attempts, these guys were the winners and totally got me into baking. I hope you love them as much as we do!
INGREDIENTS
2 TBS coconut oil—softened, but not melted
3 TBS pure maple syrup
1 egg
1 tsp pure vanilla extract
2 cups Bob’s Red Mill almond flour
1/2 tsp baking soda
1/4 tsp pink himalayan salt
2 TBS almond butter (can sub any nut butter)
1/2 cup EnjoyLife dairy free chocolate chips (OR MORE;-))
1/2 cup walnuts
DIRECTIONS
Preheat oven to 375 degreeS. Mix together all wet ingredients: coconut oil, maple syrup, egg and vanilla extract. Add all dry ingredients to the same bowl: almond flour, baking soda, pink himalayan salt. Mix wet ingredients mixture and dry ingredients together to form dough. Stir in almond butter (or subbed nut butter). Fold in chocolate chips and walnuts. Form dough into cookies and place onto baking sheet. Bake for 8-10 minutes or until cookies are firm but still soft to touch (you want them to be gooey!) Remove from oven and let cool for 10 minutes.
